Rules for preparing the best Green Tea:
BOILING
- Never boil Green Tea.
- Boil the water not the tea.
- Boiling the tea is cooking the tea and cooking the tea can extract bitter flavors.
- Put the tea in the water only after the boiling has stopped.
- Some prefer the water to only steam and never boil.
- Some non-green teas recommend stages up to boiling or even boiling itself.
WATER
- Start with cold water.
- Do not use distilled water.
- Do not use stagnant water.
- The longer the tea steeps, the stronger the tea.
- Use spring, filtered, or bottled water whenever possible.
- Tap water or 'hard water" may contain high mineral levels afecting flavor.
- Let the tea steep in the water from 1 to 5 minutes depending on the tea.
- When using tap water, run the water for a moment to clean out the water pipes.
- Water can carry the taste of metal so do not use metal pots or kettles.
- Rinse both pots and cups before using to ensure that all soap residue is gone.
TEA POT
- Never use a metal pot for boiling water.
- Metal pots will flavor the water and so interfer with the flavor of the tea.
- Never wash the tea kettle with soap. Soap can ruin the flavor of the tea.
- Use only ceramic, ceramic coated, earthenware, or glass tea kettles. Some also think that stainless steel is acceptable.
TEA
- Do not stir the tea, let it steep.
- Tea is sold to distributors in 3 grades: tops, middles, bottoms.
- Some ceremonial tea is whisked.
- Use only "supreme quality" tea.
- Do not use plastic, foam, or metal cups.
- Use one tea bag for every cup of tea.
- Use one rounded teaspoon or about 2-2.5 grams per 6 ounces of water.
- Keep the tea fresh by keeping it sealed.
- Drink the tea from a ceramic or earthenware cup.
- Squeeze out the tea bags into the pot before removing.
- Put the tea in the water only after the water stops boiling.
- Compost or throwaway the tea bags and do not leave them in your cup.
INFUSER
- Allow room in the infuser, such as a tea ball, for the tea to expand.
- Pour the tea through a strainer instead of using an infuser.
- You can make multiple pots of tea using the same tea leaves if tops not bottoms.
STORAGE
- Keep the tea from air.
- Keep the tea from light.
- Keep the tea from heat or sunshine.
- Keep the tea from water or moisture.
RICE TEA
For a great tasting rice, use green tea for making your rice. Of course, a rice steamer is best.
